From the Chef
Chef Khoa originally worked in IT before deciding to follow his passion for cooking. After developing a strong foundation in Vietnamese cuisine, he completed vocational training with experienced European chef Benjamin Baumann, who has worked extensively in Vietnam.
Together, they planned the kitchen layout and explored new techniques, including homemade pasta and sausage making. The success of the fresh pasta helped shape Cantine’s menu, with a range of sauces created to offer guests different flavours while maintaining consistent quality.
For Khoa, the most rewarding part of the role is seeing guests leave with a smile after enjoying the food, drinks, atmosphere and hospitality. His aim is always to prepare fresh, satisfying dishes and make every guest feel welcome.
